Chilled Bibingkang Malagkit Recipe

Bibingkang Malagkit is made of Glutinous Rice cooked in Coconut Milk or cream along with Brown sugar or muscovado sugar ..it's a typical Filipino Rice Cake or Filipino delicacy usually cooked in skillet or steaming process..




My bibibngka is ver different from others bibingka you usually known..

INGREDIENTS..
servings .. family size.. 3to 5 servings
preparation and cooking ... 4to5 hours to 1 day until you serve it..

3 cups Glutinous Rice
2 cups coconut cream
1 cup coconut milk
1 cup cane sugar or add more
1 tsp vanilla essence or use Pandan
pinch salt

For the Caramel sauce or Coconut Jam..
1  cup coconut cream
1 cup or 1 1/2 cup Muscovado sugar
a drop of vanilla essence

Adding Latik or Coconut Curd is a choice....much better if you add..


Utensils
spatula
wooden spoon
skillet
glass tray or bilao with banana leaf
measurements like cups and spoon..

Procedure..

1,Wash rice properly and soak in water for an hour
then drain when start to use it..

2. In a Skillet , pour 1 cup coconut milk and add cleaned Rice... steam for a few minutes..
stir occasionally ..

When no you notice rice is semi cook add 1 cup coconut cream . keep stirring to avoid burnt..
add coconut milk as it need..

3.. check every rice if its tender enough..then add sugar amount you prepared and add vanilla essence
pinch salt also..

4 .keep stirring until rice cook, and soft and fine texture , no trace of rice if possible..should be fine creamy and chewy ..

5..when you think is the bibingka is almost done..
off the heat and transfer to a tray you prepared..

LETS MAKE SAUCE
in a skillet pour 1 cup muscovado sugar or panutsa together with coconut cream..cook in medium fire , stir until becomes thickens and form a jam... don't over cook

Then Pour the coco jam sauce on top of the Bibingka ..spread it evenly .
and bake in an oven toaster atleast 20 minutes or more minutes.

After you oven baked it..
allow to cool completely or can serve while it's warm

but i suggest the best time to serve this is after you chilled it in the fridge for an hours until the top jam are completely chilled..
then it's ready to slice and enjoy

CHOCOLATE ESPRESSO CREAM

Good Tastes Sweet desserts for you 







INGREDIENTS..
2 cups heavy Cream or use All Purpose Cream
1/2 Cup Sugar of your Choice
1/2 Cup Unsweetened COCOA POWDER
2 tsp Espresso powder or instant Coffee
2 1/2 tbsp Cassava Starch or 3 tbsp Cornstarch
1 cu semi sweet dark Chocolate Chips
drops of Vanilla




Some pistachio or nuts you like
1 dark chocolate bar .. Shaved or grated

PREPARATION



1.in a medium sauce pan, heat the milk for medium for 2 to 3 minutes ..

2. Whisk in the Sugar , Cocoa , Espresso , diluted Cornstarch , add chocolate chips..
Stir in medium heat until mixture thickens..about 5 to 7 minutes or so..

3, Then remove from the heat.. and stir in vanilla ..

4, Pour mixture in a glass or cups you prepared .. or small coffee cup then let it cool uncovered..
for 30 minutes or so..

5, Refrigerate before servings.. so you can enjoy the yumminess of the cream ...

And if desired garnish with nuts you like and shaved curl chocolate ..

Pineapple Longanisa (Pinoy Sausauge)

Homemade longganisa na may pinya (skinless)
Lutong bahay timplang Bahay para sa pamilya







INGREDIENTS..
serving -  14 pieces or more  (4 inches long and 1 inch thick)

360 grams Ground Pork
Sliced Pineapple /amount is according you like
1 head Garlic/minced or chopped
1/2 tsp Black Pepper
1 1/2 tbsp Paprika Powder
2 tbsp Vinegar
1tbsp Pineapple Juice
3 tbsp brown Sugar
1 tsp Soy sauce


PAGHAHANDA AT PAGLULUTO..

1..use cleaned and safe Ground Pork meat or make your own giniling at home..
Ilagay ang giniling sa isang bowl..

At Pagsasama samahin langhat ng Sangkap ...haluin at massage ng kamay if possible para maging siksik at pumantay ang timpla..

2.Balutin ng korteng longganisa gamit ang Cling wrap or sausage casing if you have ..





3..Kapag nabilot na ilagay ito sa freezer ng ilang oras para mabuo ang korte..

After an hours kapag matigas na ang longganisa, bahagyang hugasan sa tubig ito upang madaling tanggalin ang plastic wrap..huwag hayaang matunay ang yelo ,dahil madudurog ang longganisa kapag ipriprito na..




KUNG NEGOSYO ang Plano..Adding Gulaman Powder or Cornstarch is best Suggestion..
at para di masira adding more salt is good..

4..And then you can fry the longganisa the next day lalo na sa breakfast ng pinoy style ..
Lagyan ng mantika ang kawali at ihulog ang longganisa..
adding bit water is fine while cooking..pero frozen ang longganisa ,kusang may tubig na lalabas dito para masteam ang niluluto at hindi mahilaw ang loob..

Then serve with warm soup,garlic rice ,atsara or any vegetable salad

No Bake Brownies

Oven problem ? How about Steaming ?
Natry nyo na ba? Subukan nyo mas masarap pa sa baked brownies, halos walang pinag iba...






INGREDIENTS..
8 x 8 ..baking tray 




100 grams Cake Flour Mixed or use Plain Flour / 1 cup ( not exactly the measurement , almost near)
2 medium whole Eggs
100 grams Maple Sugar or use any sugar /1 cup ,almost
50 grams butter /4 tbsp
50 grams cooking oil / 4 tbsp (i used rice oil)
124 cups Chocolate Tablets or bar / 1 cup
30 grams Cocoa Powder /about 2 1/2 tbs to 3 tbsp
Adding VANILLA essence is ok
We like to add Almond Nuts slices on top /or use any nuts like cashew and so on

Get your Steamer ready with half water in..
Paiinit kapag almost ready na ang lulutuin nyo..

Get your prepared baking tray or any moulder you like it to cook your brownies..

PAGHAHANDA AT PAG- LULUTO 

1.Boil water in a small pot, ipatong ang stainless bowl at tunawin ang 1 cup na chocolate tablets at ihalo ang 4 tbsp na oil at 4 tbsp na butter. hayaan itong mag melt... and then off the heat..iwan muna natin siya ..

2..In a mixing bowl , crack two eggs and ilagay at ihalo ang 1 cup sugar then mix well until well combined..

3.. Then add cocoa powder , stir again until well blended using whisk or spatula

4..Next Sift flour in , add flour in batch portion ..then mix it well until you get a fine and smooth butter, using electric mixer is fine..but wire whisk or spatula is enough in this recipe ..

5..When no trace of flour ..stop and get your prepared tray grease and line a wax paper in..
and STEAMER must boiled ready ...

6..Then Pour the batter mixture into the tray .Sprinkle with your favourite nuts on top.

7..Place on the steamer and cook for about 1 hour and a half ...check after 40 minutes..
cover your lid with cheese cloth para di matuluan ng pawis from the lid..

8..After an hour tusukin ng sharp stick kung luto ang loob..if it's done..Remove the brownies from the steamer..allow to cool down completeley




Chill in the Fridge at least 2 to 3 hours before slicing and serving




Huwag Hiwain ng mainit pa..UPANG HINDI MADUROG...KAPAG MAINIT nyo itong HINIWA , crumbly siya..

Magiging durog durog po ang brownies ..
pero makakain den naman kaya lang, hindi na magandang panghanda o sa presentation..
Brownies should be dense and chocolaty ...and sweet ..
