Pork Belly Adobo (Braised Pork Belly)

Adobo comes from Spanish word adobar ,means marinated sauce or seasoning..



This dish is very popular in the Philippines.there are many regional varities of Adobo to eat or to cook deppends on its preferences ..
It is a comfort food for every Filipino...Adobo contains of very simple ingredients like garlic ,vinegar ,soy sauce and black pepper ..while others adding bay leaf, sugar ,star anise and creating new version of adobo to enhance its flavor..

I rarely cook pork meat, but when my kids requested i cook adobo for them..
today i added boiled egg and spinach para hindi puro meat..

To reduced the greasy meaty pork and removed the first few percent of its oil, i give a 2 to 3 minutes boiling the pork before cooking to also remove some dirt ,then next rinse and drain..
after that,in a clean frying pan .with some tbsp of water , simmer the cut pork until the oil comes out from the meat.

we don't need too much oil from the pork meat..





INGREDIENTS 
732 grams PORK BELLY (boiled in 3 minutes in enough water ) then cut into size you like
6 boiled egg
5 tbsp Kiko man Soy sauce
4 tbsp Apple VINEGAR
5 cloves of garlic..
1 tsp garlic powder 
1 tsp ground black pepper 
2 tsp black  pepper corn
some salt or fish sauce/adjust 
4 cups water
2 to 3 laurel leaf
star anise /optional
1 tsp muscovado sugar/optional



Preparation and Cooking

1.Let start first by a 3 to 5 minutes boiling the pork belly, over high heat .you can use sharp tools to prick the meat while boiling .or cut into halves before boiling ,when you noticed no traces of scum in the meat,throw out the boiled water and take out the meat , then rinse and clean the meat with tap water
cut the meat into bite sizes you like..



2.In a frying pan again ..pour some amount of water or 1/4 cup ,then simmer the pork belly until to lose water and comes out the oil ..then take out the meat and discard the oil using kitchen paper..
rinse and clean the meat in cold water ,then start to marinade or cook right away with out marinating process..


3.in a bowl  ..marinade pork belly..combine all ingredients
garlic..3 tbsp soy sauce ,vinegar,black pepper ,black pepper corn,laurel  leaf..you can rest them long hours or one night.if you can not wait .cook them right away.







4..add 2 cups water or adjust as it needed, cover and simmer in a low heat fire until the pork belly become tender..
adjust seasoning according to your taste.

While cooking you can add the boiled eggs or half way of cooking..to absorb adobo flavor to your eggs. then cover ,cook and relax ..

5..then after an hour check when meat are tender enough, i adjust the seasoning with 1 more tbsp of soy sauce and 1 tbsp vinegar .garlic powder,black pepper or so 
and then cover,

of course be observant while cooking it..you can reduce the liquid if you like or let syrup remain in your adobo .

when 90 percent adobo is done, i added 1 tsp muscovado sugar..cook for about 1 minute then it's done..

Another extra work for cooking adobo..just ignore if you don't like
This idea was adopted in our own house when i was a kid.
there we made a habit when we were younger,we usually fry the pork meat in a separate frying fan to make crispy adobo but without adding oil ...
and later just pour the adobo syrup or the remaining sauce on top of the fried pork belly meat..yummy

yeah, i know it's time consuming.

Sweet Adobong Manok at kangkong

Simple at madaliang luto para sa inyong hapagkainan..
Masabaw na adobong manok na may kangkong na medyo manamis namis..





Mga Sangkap
200 grams Chicken thigh
1 bundle Kangkong (water spinach)
4 cloves garlic /crushed
1 small size white onion..
black pepper corn and powdered black pepper
1 tbsp sugar
5 tbsp water
3 tbsp vinegar
2 tbsp soy sauce
1 tbsp patis/fish sauce
toasted garlic/optional
a drop of chili oil/optional

PAGHAHANDA AT PAGLULUTO

1.Hugasan ang manok ,Banlian ng kumukulong tubig para maalis ang dumi ,banlawang mabuti at hiwain ng ayon sa gustong laki (bite size)

2.Sa isang bowl ,ilagay ang manok at ihalo ang toyo,suka,patis,2 tbsp na tubig,sibuyas ,bawang at paminta..haluin or ibabad ng kahit 10 minuto..

3..Maaring iluto na ng deretso sa kalan,pakuluan ito ng mga 2 minuto,at bawasan ang sabaw ..ibukod sa isang tasa at itabi.

4..Lutuin ang manok hanggang maprito ,ihalo ang kangkong haluin at takpan ng isang minuto..

5.ihalo ang sabaw na tinabi timplahan ulit ng 3 tbsp na tubig ,takpan at lutuin ng mga 4 to 5 minutes sa katamtamang apoy.masabaw ang timplang ito,so  reduce the sauce if you like..

6..after a minutes,lagyan ng 1 tbsp na sugar haluin at hayaang maluto ng 1 minute..then ready na..
transfer to a serving plate and enjoy..
drop a little chili oil or budburan ng toasted garlic..

Sweet Spicy Tuyot na Pusit Adobo

Pang Pulutan o Pang Ulam bagay na bagay...medyo malakas ito sa rice so alalay lang...
Minsan masarap deng papakin ..

Kung may time ibilad sa araw ang pusit mas okay,kung tinatamad na o wala ng tyaga ,maari naman itong iluto sa oven para maging tuyot at medyo chewy ...or lutuin na lang sa kawali .











Ingredients...

1/2 kilo of Small size fresh squid  washed and cleaned
1/4 cup Vinegar or adjust
3 tbsp Soy sauce or adjust
some patis (fish sauce) or use salt instead
Black pepper
5 to 6 cloves of Chopped Garlic
2 to 3 tbsp Sugar
Cayenne Pepper or siling pulbos..add as spicy as you like
Kaunteng Tubig
Garlic powder/optional
2 to 3 tbsp cooking oil

Igisa lang ang bawang kasama ng siling pulbos,( mas masili mas maanghang syempre)
sa kaunting mantika
at isunod ang PUSIT ..toyo suka patis paminta patis ..
lagyan ng 2 to 3 tbsp na sugar at mga 1/2 cup na tubig..
lagyan ng 2 dahon ng laurel..
pakuluan sa katamtamang apoy hanggang sa matuyot
haluin lang ito ng haluin para maiwasan ang pagkasunog..

Maaring lutuin ito sa oven toaster ng 20 minutes..
.kung gusto ng medyo tuyot pa at pa barbecue
ang lasa...
Ilagay sa dahon ng saging ,kung mayroon at saka ito iluto sa oven toaster..

Chicken Wing Gyoza Arranged in Pinoy Version ( Paksiw Adobo)

In short ang Chicken wings ay inalisan ko ng buto at pinalaman ko ng giniling at nilechon ko sa oven..then niluto ko ng papaksiw adobo..gets nyo na..

Ingredients,,,

Pechay..
Chicken wings 8 pieces
1 head garlic
black pepper corn and powder type
dried bulaklak ng saging
kapirasong star anise
2 tbsp sugar
1/4 cup vinegar
3 tbs soy sauce
1 tsp patis
1 1/2 cup water
kaunting olive oil

Para sa Filling..palaman
kaunting giniling 100 g. na manok or any meat
minced garlic
chopped green onion
1 tsp sugar
toyo at suka
paminta..


Paghahanda...

Alisin ang buto sa chicken wings..

Chick Peas ADOBO and Chicken

( GARBANZOS Recipe)
Kakaiba ano!..Paborito ko kase ang chick pea o yung tinatawag na garbanzos...Malimit ko itong Adobohin na may halong Manok.. bukod sa maaring ilagay sa Menudo.Caldereta ,Afritada,Bulalo at kung ano ano pang lutuing Filipino..

Pero para sa akin mas masarap at bagay ang Adobong Gabanzos,Subukan nyo ng masiyahan kayo..



Wala akong ginawang cooking video for this,madaliang luto para sa Dinner namin,ngunit i'm going to share this recipe ..and next time subukan kong gumawa ng video cooking nito..

Mga Sangkap na aking ginamit...( Ingredients )

300 grams..chicken meat,sliced into small pieces.
1 canned unsweetened garbanzos..
1 medium size onion,chopped
1 whole garlic .minced
black pepper corn
black pepper and salt to taste
1/4 cup Vinegar
1/4 cup Soy Sauce
a small piece of Star Anise
1 laurel dried leaf
1 cup water
2 large Potato /Optional...request ng kid ko lol..
2 tbsp of olive Oil..

Pagluluto...

Sa isang kawali na pag lulutuan,ilagay o pagsama samahin ang lahat ng sangkap...maliban sa garbanzos at olive oil,kapag malambot na ang manok,maari na itong ihalo..

At lutuin sa tamang apoy ,takpan at palambutin ang manok at ang patatas..

Hayaang maluto ,obserbahan ng di masunog ,iadjust ang timpla ayon sa inyong panlasa.

Lagyan ng 2 tbsp of Olive oil kung malapit ng maluto...
