Chilled Bibingkang Malagkit Recipe

Bibingkang Malagkit is made of Glutinous Rice cooked in Coconut Milk or cream along with Brown sugar or muscovado sugar ..it's a typical Filipino Rice Cake or Filipino delicacy usually cooked in skillet or steaming process..




My bibibngka is ver different from others bibingka you usually known..

INGREDIENTS..
servings .. family size.. 3to 5 servings
preparation and cooking ... 4to5 hours to 1 day until you serve it..

3 cups Glutinous Rice
2 cups coconut cream
1 cup coconut milk
1 cup cane sugar or add more
1 tsp vanilla essence or use Pandan
pinch salt

For the Caramel sauce or Coconut Jam..
1  cup coconut cream
1 cup or 1 1/2 cup Muscovado sugar
a drop of vanilla essence

Adding Latik or Coconut Curd is a choice....much better if you add..


Utensils
spatula
wooden spoon
skillet
glass tray or bilao with banana leaf
measurements like cups and spoon..

Procedure..

1,Wash rice properly and soak in water for an hour
then drain when start to use it..

2. In a Skillet , pour 1 cup coconut milk and add cleaned Rice... steam for a few minutes..
stir occasionally ..

When no you notice rice is semi cook add 1 cup coconut cream . keep stirring to avoid burnt..
add coconut milk as it need..

3.. check every rice if its tender enough..then add sugar amount you prepared and add vanilla essence
pinch salt also..

4 .keep stirring until rice cook, and soft and fine texture , no trace of rice if possible..should be fine creamy and chewy ..

5..when you think is the bibingka is almost done..
off the heat and transfer to a tray you prepared..

LETS MAKE SAUCE
in a skillet pour 1 cup muscovado sugar or panutsa together with coconut cream..cook in medium fire , stir until becomes thickens and form a jam... don't over cook

Then Pour the coco jam sauce on top of the Bibingka ..spread it evenly .
and bake in an oven toaster atleast 20 minutes or more minutes.

After you oven baked it..
allow to cool completely or can serve while it's warm

but i suggest the best time to serve this is after you chilled it in the fridge for an hours until the top jam are completely chilled..
then it's ready to slice and enjoy
