Chilled Bibingkang Malagkit Recipe

Bibingkang Malagkit is made of Glutinous Rice cooked in Coconut Milk or cream along with Brown sugar or muscovado sugar ..it's a typical Filipino Rice Cake or Filipino delicacy usually cooked in skillet or steaming process..




My bibibngka is ver different from others bibingka you usually known..

INGREDIENTS..
servings .. family size.. 3to 5 servings
preparation and cooking ... 4to5 hours to 1 day until you serve it..

3 cups Glutinous Rice
2 cups coconut cream
1 cup coconut milk
1 cup cane sugar or add more
1 tsp vanilla essence or use Pandan
pinch salt

For the Caramel sauce or Coconut Jam..
1  cup coconut cream
1 cup or 1 1/2 cup Muscovado sugar
a drop of vanilla essence

Adding Latik or Coconut Curd is a choice....much better if you add..


Utensils
spatula
wooden spoon
skillet
glass tray or bilao with banana leaf
measurements like cups and spoon..

Procedure..

1,Wash rice properly and soak in water for an hour
then drain when start to use it..

2. In a Skillet , pour 1 cup coconut milk and add cleaned Rice... steam for a few minutes..
stir occasionally ..

When no you notice rice is semi cook add 1 cup coconut cream . keep stirring to avoid burnt..
add coconut milk as it need..

3.. check every rice if its tender enough..then add sugar amount you prepared and add vanilla essence
pinch salt also..

4 .keep stirring until rice cook, and soft and fine texture , no trace of rice if possible..should be fine creamy and chewy ..

5..when you think is the bibingka is almost done..
off the heat and transfer to a tray you prepared..

LETS MAKE SAUCE
in a skillet pour 1 cup muscovado sugar or panutsa together with coconut cream..cook in medium fire , stir until becomes thickens and form a jam... don't over cook

Then Pour the coco jam sauce on top of the Bibingka ..spread it evenly .
and bake in an oven toaster atleast 20 minutes or more minutes.

After you oven baked it..
allow to cool completely or can serve while it's warm

but i suggest the best time to serve this is after you chilled it in the fridge for an hours until the top jam are completely chilled..
then it's ready to slice and enjoy

BIBINGKANG PINIPIG Recipe

Filipino Delicacy (Pinoy Kakanin)
Pinipig ay isang uri ng bigas ,murang bunga ng palay ,pinitpit para maging flakes or flat na butil
Ginagamit ito sa ibat ibang klase ng kakanin,drinks ,desserts at ano pa nga ba? lol



Sabi ng nagtitinda ng bigas,ang kulay berde na pinipig ay food coloring na,"akala ko may totoong berdeng pinipig"..hindi daw lahat ng butil ng pinipig ay magiging berde.
 minsan daw may naliligaw na maberde berde ngunit hindi sobrang berde ,na tulad ng nakikita nyo sa mga pamilihan ..(pekeng kulay pala )

Today nagluto ako ng kakaning pinipig..hinaluan ko sya ng Glutinous rice flour sa dahilang ayaw ko ng purong Pinipig.,parang nagagaspangan ako or sobrang lata ang panlasa ko nito,
So ang pagtitimpla is according na ren sa hilig ng inyong bibig at diskarte ng pagluluto..



Kung tig isang sliced ang kakainin,may 12 pieces ang magagawa..
so..marami na ren ,tikim tikim lang naman ang kain ng di bumigat sa tyan..

INGREDIENTS

2 cups PINIPIG
1 cup Glutinous rice flour
2 can Coconut Milk (4 cups )
2 pinch salt
1 dahon ng Pandan
1 1/2 cup of Muscovado Sugar ( i used 2 cups ,nasobrahan ako ng tamis ) so adjust your sugar
ilang maliit na piraso ng star anise
1/2 cup of Toasted Pinipig for toppings





PAGHAHANDA AT PAGLULUTO..(in my own style)

1..Sa isang bowl na may Pinipig,buhusan ito ng 1 cup na coconut Milk ,haluin at ibabad ng mga 10 to 15 minutes..( di kailangang ang ubod tagal na oras dahil lalata masyado)



2..Sa isang Kawali ,sa mahinang apoy,Ibuhos ang natirang coconut milk sa unang lata muna,
ihalo ang star anise na piraso...( alisin agad kung ayaw ng masyadong malasa ang Anise)
then haluin ng bahagya ,at isunod ang asukal ..haluin at lutuin hanggang maging caramel..




3..Kumuha ng kaunting coco jam syrup para sa toppings ng bibingka,then iset aside muna
ang natirang syrup ay hayaan sa kawali,at dito ihalo ang binabad na PINIPIG
haluing mabuti ,at buhusan ng COCONUT MILK ng ilang batch at di bigla
habang inoobserbahan ang lata o lapot ng pinipig ,ay unti unting ihalo ang GATA ..



ISAMA ANG DAHON NG PANDAN ,bago malimutan..(late ko na itong nailagay)
so ihalo agad ng lumabas agad ang aroma..
(Ang pagbuhos ng Gata ay dahan dahan lang, Kapag binuhos bigla lalapot masyado ang pinipig)
ang diskarte at paraan ay nasa sa inyong kamay,.this is my own techniques.


4..kapag napunang nadudurog na ang pinipig ,ihalo ang GLUTINOUS RICE FLOUR na tinunaw sa kaunting COCONUT MILK..
Haluin hanggang sa mawala ang lagkit at paninikit sa kawali...






5..Kapag nagmukha na syang Kalamay,hanguin at ilatag sa isang paglulutuan na may sapin na dahon ng saging.at ibuhos sa ibabaw ang ginawang jam syrup at ibake sa oven or lutuin sa oven toaster ng mga 15 to 20 minutes,,
or adjust baking time as you observe..

Bibingkang Malagkit with Macapuno

Kase nga" medyo maiba naman ang rice biko,namiss ko lang ang cassava cake..dinaya ko na lang sa glutinous rice..lagyan lang ng eggs,cheese at condensed milk siguro lasang cassava cake na siya talaga..








Mga Sangkap ...For small family ang ingredients..

1 cup glutinous rice flour
1 can coconut milk or 3 cups coconut milk
1/4 cup wash sugar
2 tbsp wash sugar
1/4 cup muscovado sugar
pinch of salt
2 cups macapuno






First is to make a caramel glaze of muscovado and coconut milk with macapuno
lutuin sa isang kawali 1/2 cup macapuno ...1/4 cup na coconut milk at 1/4 cup na muscovado sugar
at iset aside..

hugasan ang bigas at buhusan ng 1 cup na coconut milk at 1/4 cup na asukal..kaunting asin..
lutuin ito ng medyo painin.( i cooked in rice cooker)..yung di lutong luto..

At hanguin ..

Maghanda ng non sticky fry pan..Ibuhos ang natirang coconut milk (1 cup ) at ihalo ang 2 tbsp na asukal at macapuno..Ihulog dito ang Sinaing na Malagkit..
haluin ng haluin hanggang maging makunat ang malagkit sa kawali..

then ,ihulma sa isang lalagyan,latagan ng dahong ng saging kung mayroon,pahiran ng oil or butter..







Ipatong sa ibabaw ng rice bibingka ang macapuno jam or bukayo na ginawa..

Mag painit ng 5 minutes sa oven toaster..
Lutuin ulit ito ng 20 minutes sa oven toaster..

then ready na ang bibingkang malagkit na may macapuno....
enjoy...with hot green tea ..

Steamed Cassava Cake




  Para sa mga Gustong magluto ng Cassava Cake
kaso walang Pugon i mean oven sa inyong kusina,Gagamit tayo ng Steamer.
"opo yung steamer na pinaglulutuan nyo ng PUTO at embutido at ng shumai..etcs

   Kaso nga di lahat ng bahay may Oven Range okay? "kung walang steamer .nganga "
so iluto nyo sa kawali hahahhh "pede ren,,pero sa susunod na yung explain nyan..maryones.."

 Ang lasa syempre masarap den ,tulad ng baked Cassava cake.wag ng magreklamo at magsimula ng magluto hahahh


Mga Sangkap ay naririto po."

4 cups na grated o shredded cassava ( Kailangan ay marunong kayong gumawa nito..Kapag inad ad nyo na ang cassava ,ito ay pipigain at ang Juice ng Cassava ay tinatapon)
isang piga lang naman..gumamit ng katsa o fish net ,o kaya salaan.
2 cups creamy coconut milk
1 canned condensed milk or 1 cup..adjust nyo na lang sa mahilig sa matamis
3 tbsp grated cheese or parmesan powder
1/4 cup sweet macapuno
     Adding eggs is pwede ren..1 or 2 whole egg/Optional( sa allergy sa itlog pwedeng wala)
     adding butter here is also pwede..mined is wala so okay lang




At for toppings..
margarine,macapuno at cheese


Paghahanda at Pagluluto

Magpainit ng steamer ,at lagyan ng mga kalahati ng dami ng tubig..
at ihanda ang mould tray..gumamit ako ng cake tray ( isang plato ang sukat)
sapinan ng dahon ng saging kung mayroon .
   "if wala pahiran ito ng oil or sapinan ng cooking paper na siguradong maaring gamitin sa steamer...
or i suggest ,you can use aluminum tray 


1.In a Bowl ihulog natin ang 4 cups na fresh shredded Cassava..at itabi lang muna sa tabi tabi
 sa hindi nilalangaw ha..hahahh..takpan nyo muna..



2..Again ,in a separate bowl naman, Ibuhos ang 2 cups na Coconut milk,1 canned or 1 cup ng condensed milk at mga 1/4 cup ng matamis na macapuno..Haluin syempre..

3.At ngayon,Paghahaluin naten ang Cassava at Liquid mixture...



4..ibuhos sa mould tray ang batter mixture at lutuin sa steamer ng mga 25 to 30 minutes,
gumamit ng cheese cloth ,ilagay sa ibabaw ng takip or punasan na lang kung sinisipag...

5..after mga 25 minutes ,checkin ito gamit ng matulis na bagay like barbeque stick ,para malaman kung luto na
ang loob..



6.If sure na luto na ang inyong cake, pahiran ng margarine ang ibabaw at budburan ng grated cheese at ng kaunting macapuno ..hayaan muna sa steamer ng mga 5 to ten minutes..then ready to serve.

Puto Kutsinta Recipe

Puto at Kutsinta in one Recipe...








Ingredients..
   it serves 16 to 18 small size cup cakes

1 cup Rice Flour( Galapong) soak this for1 hour, para malambot ang puto..if no time na,i'ts okay den naman..
1/2 cup hot cake flour (if using plain flour add a 1 tsp of baking powder..)
 1/2 cup tapioca starch..( it helps puto para maging chewy ang texture,parang sago ba..)
1 tsp powdered atsuete /diluted in 1 tbsp water
1 tbsp melted butter
1 egg 
1 cup coconut milk
1/2 cup muscovado sugar or can use brown sugar/then adjust your sugar according to each taste.

add cheddar cheese for toppings..if possible yung di natutunaw agad na keso..
and can eat with grated niyog..

1st Step ,Sa isang mixing bowl...
Combine the following ingredients...

1 cup coconut milk
1/2 cup sugar
rice flour,tapioca starch and hot cake flour
mix them well together





then add egg..and 1 tbsp melted butter






Mix them well together,or use an electric beater para mabilis at smooth ang batter.
and ready for steaming...
brush molds with oil..and pour the batter

steam for 20 minutes or until its done..
check with sharp tools or toothpick,



kapag medyo matigas na yung puto add sliced cheese on top ,and steam 1 minute..then okay na.


then serve with grated coconut and enjoy.....................






ja ne...
