KBL or Kadyos, Baboy, Langka is an Ilonggo dish, which i never tried . and very similar to sinigang ..usually they use batwan fruit to make a sour soup flavor ..
Ingredients
2 pieces Pata (pork hocks) sliced into pieces
1 unripe Jack fruit, cubed
2 cups pigeon pea (kadyos) soaked in water for an hour
1 cup Ripe tamarind juice or add more if desired /or use batwan fruit
12 cups water /adjust
Kamote tops (or any vegetable you like ,string beans ,kangkong etc)
Salt and pepper or use Fish sauce
4 chili pepper /siling haba
1 bundle of lemon grass/ or ginger /optional
Preparation and Procedure
In a pot with water, add lemon grass ,boil pork for 10 to 15 minutes to remove traces of scam ,remove from boiling water ,wash and rinse ..
I will grill the pork using turbo for about 40 minutes or just cook it slowly in a pot for about 1 to hours until becomes tender ..
while boiling or grilling the pata ..let us saute garlic onions and tomatoes with 2 tbsp oil until fragrant..
after we grilled or boiled pata we can cook them in a pressure cooker
Add pork , kadyos beans and langka cubes and sauteed ingredients . pour some amount of water just to cover the meat ..add a pieces of ginger or lemon grass and cook for an hour ..
After an hour ,remove lemon grass or tanlad ,we can now add tamarind juice and chili pepper ,seasoned with salt or patis..adding black pepper is a choice , cook for another 10-15 minutes
make sure the langka kadyos and pork are tender before adding sour ingredients....then we can adjust the taste ..
the last part add Kamote leaves cook for 2 to 5 minutes and done
adjustments of water is up to you ..

INGREDIENTS...
480 grams Pork loin Meat , any cut meat part you like
Right amount of Tamarind Paste or use fresh Tamarind
6 small pieces of Japanese Okra
3 medium sice Taro Root or Gabi
1 medium size White Radish or Labanos
1 bundle of Kangkong (water spinach)
2 medium size Kamatis
1 medium size Sibuyas
some pieces of Siling Haba or any chili you like
2 cloves Garlic
2 sliced of Ginger
add any vegetable you like
Paghahanda At Pagluluto..
1.Hiwain lahat ng gulay ayon sa kinaugaliang hiwa or sariling paraan ng paghihiwa ng gulay
para sa sangkap ng sinigang recipe..
Hiwain sa dalawa ang Pork meat kung malaki ang sukat
2.Sa isang kasirola na kasya ang meat lagyan ng kalahating tubig ang dami..Pakuluan ng 2 to 3 minutes ang Pork meat
3.Pasukahin ang dumi sa malakas na apoy ,huwag iiwan hanggang sa luminis ang tubig na kumukulo..Itapon ang tubig at hugasan ang Pork meat sa tubig gripo..
4.Hiwain ang Pork Meat ayon sa gustong laki .
5.Ibalik sa isang malinis na kawali ang hiniwang pork meat lagyan ng 6 tbsp na tubig pakuluan sa mahinang apoy hanggang lumabas ang mantika..
alisin ang meat and rinse in cold water twice is suggested..
at itapon ang mantika gamit ang kitchen paper . huwag itapon sa lababo upang makaiwas sebo sa inyong sink..
6..Sa isang malinis na kawali at igisa sa luya at bawang ng walang mantika...do this until ginger and garlic smell the aroma ..at patayin ang apoy
7..Next isalin ang Pork meat sa isang kasirolang paglulutuan ng Sinigang..Lagyan ng 3 to 4 cups water, takpan at pakuluan sa mahinang apoy hanggang sa lumambot ..1 hour or so
8 ..after 1 hour ihulog ang sibuyas,kamatis at gabi..ilagay ang sampalok .timplahan ng paminta at asin ..according sa inyong panlasa ..haluin at pakuluan ng 5 to 10 minutes..or so
9. After 5 minutes , Ihulog ang ibang gulay like labanos,okra, sili at kangkong .lutuin ng pa half cooked para masustansya for about 3 minutes or depende sa gustong luto ng gulay..
adjust ang tubig if needed at pati ang timpla...then kung luto na..ready to serve na..
10..kainin hanggat mainit with your favorite steamed rice..or some rich in fiber rice like brown rice black rice and so on..

Beef Sinigang
Comfortable food ng mga Pinoy..Maasim na sabaw ng sampalok..
pork,beef,chicken shrimps pa or fish ..kahit ani pwedeng isigang..
mayaman o mahirap sinigang is the best..
This time,I used Beef chop sliced ( malambot ang part na ito) and beef ribs ( to make bone broth)
soup for healthy bone,,
Ingredients
1 sliced beef chop usually use for steak
5 beef ribs
45 grams tamarind na hinog
1 bunch of water spinach/kangkong
1 medium size onion
1 large size tomato
1 red bell pepper
labanos /white radish
sitaw or green beans
talong /eggplant
salt .black pepper at patis/fish sauce
2 tsp cooking oil
6 cups water
2 siling labuyo or pampaksiw
add okra,taro root/gabi ,mustasa ,puso ng saging ,sigarilyas,bataw .patane ..anything na bagay sa sinigang is okay..sometime i have to add saging na saba..kaso no stock eh
PAGHAHANDA AT PAGLULUTO..
1.As always,i have to remove pink slime in the beef,kaso alam natin di naman fresh ang beef sa market at hindi na ito mapula,which is coated with something chemicals..and we don't want to put it in our mouth..
2.I boil the beef in enough water to cover it..about 2 minutes para maalis ang dirt ..then itapon ang tubig at hugasan sa malamig na tubig..ready na..
3.and i have to saute garlic and ginger in 2 tsp oil until fragrant..or derecho nyo ng ilaga if you're nagmamadali..matrabaho nga naman mag gisa..
just to give aroma to the soup kase ang bawang and garlic,to make alis lansa den..
4..then sa isang kasirola with 7 cups water ,ihalo ang ginisang bawang at luya.adding the beef ,sibuyas at kamatis
bring them to cook for about 40 minutes to tender or depends sa beef na lulutuin nyo..
5..if beef is tender ,add the veggies and the sampalok ,season it with salt patis at paminta..
cook veggies in 10 minutes or more, kung gusto ng half cooked or depende sa type nyo.then last is
kangkong ,para crispy.cook another.3 minutes then ready na.
add siling maanghang kug gusto ..
...in Cavite or sa bahay na kinalakihan ko lang..we usually added red bell pepper in sinigang..tatay ko kase malimit mag luto ng sinigang ,ewan ko kung bakit pero bagay at masarap naman ,masustansya pa..

Fried Bangus Sinigang
Mahilig ka ba Sa Prito?
Kung sawa na kayo si paulit ulit na bangus sinigang ..Try this one naman ng maiba
Ngunit kung ikaw ay health conscious ,i suggest to use good oil or wag ng iprito hahahh..
Pero promise namis ko to paminsan minsan ba! alalay lang ang rice okis okis pa ren ang dyeta.
..... ipapatong nyo lang ang fried bangus sa sinigang...then yun na ang putahe nyo.

Sinigang na Pritong Bangus sa Miso at pinaasiman ko sa Hinog na Sampalok..
Kung walang pang prito ..eh di luto nyo ng derecho sa sinigang heheheh..
Ang sahog at mga gulay na gusto nyong ihalo ay depende sa inyong budget at alam nyong babagay sa sinigang na bangus..
"kahit nga kangkong lang",ay okay na...
Mga Sangkap na ginamit ko..
1 large Bangus..Nilinis at Sliced na
2 tbsp Miso Paste..(pwedeng wala)
Sampalok (tamarind , ang dami ay nasa inyong panlasa ,
gumamit ako ng HINOG NA SAMPALOK which is yan lang ang available sa lugar ko) ang asim nya promise

Sibuyas,kamatis.luya at bawang.
Siling Labuyo or (Bell pepper , yan yung nilagay ko)
Kangkong,sitaw,talong,okra.labanos,at gabi..
Enough water ..( maaring Hugas Bigas kung napag handaan)
Salt and pepper to taste
Patis ( Fish sauce)
Cooking oil..
Paghahanda at Pagluluto..

1..Iprito ang mga hiniwang Bangus sa tamang dami ng mantika..ang bangus ay maaring budburan ng asin at paminta..
2.Habang Nagpiprito,Maghanda ng Kaserolang Lagaan ng sinigang,Maglagay ng tamang dami ng Tubig...
3.Kapag luto na ang Bangus,itabi muna ito...At igisa sa kawaling pinagprituhan ng Bangus..
ang bawang luya sibuyas at kamatis..
4.Maaring igisa ang Miso Paste kasama ng ginisa ,ang style na ginawa ko ay sa mismong sabaw ko na siya Hinalo ( Miso Soup style )
5.At ang mga ginisa ay Ibuhos sa Kasirolang may tubig na pinakukuluan..
Timplahan according sa inyong panlasa.paminta asin at patis..
6. Maaring Ihalo na ang Sampalok at Miso ,bago ang mga gulay..or depende sa inyong gustong diskarte,,
6.Pakuluan ng kaunti then ihalo ang mga gulay alinsunod sa inyong gustong lambot ng gulay..
gabi.labanos,sitaw,talong,okra at kangkong..
7.Kapag napuna nyong halos luto na ang mga gulay ( lutuin ng pa well done or half cooked ) at kung tama na ang timpla..maari ng ipatong ang
Pritong Bangus..
Takpan sandali then ready to serve na..
