Chicken Afritada Recipe

 Afritada ay lutuing Filipino na hinango sa salitang kastila na ibig sabihin ay fry food ..ngunit ang afritada ng pinoy ay paguisado ..
Afritada in Filipino Version , Chicken meat cooked in heavy tomato sauce , similar to stew .
Afritada has different version of cooking depends on your preference ..adding  boiled egg, cheese .sausage is your choice

CHICKEN TERIYAKI RICE BOWL by Luweeh's Kitchen

My Version of making Chicken Teriyaki Rice Bowl or Donburi in Japanese..
why i said my version.? check it out..



INGREDIENTS..
2 pieces of Chicken Thigh
3 tbsp Kikoman Soy Sauce/or Light soy Sauce
3 tbsp MIRIN
1/2 tbsp Bonito Flakes or fish powder
1/2 tsp sesame oil
black pepper is according to your taste
adding ginger powder or garlic powder can gives good flavor too
or fresh onion..




Let's prepare the Teriyaki Sauce
in a cup or small bowl..Combine the 3 ingredients
Soy sauce,Mirin and fish powder ,set aside



if you're not worried of salmonella thing..you can cook your chicken in raw form directly to your heated skillet ..

in my new researched..i changed the style of my cooking when it comes to animal meat..i boil it first before i start to cook..you can skip this method ,and do what is easy for you..

Preparation and Procedure..
1..Give a quick boil about 1 to 2 minutes in enough water to cover your chicken in very high fire..
until you can see the scam flowing on top..then turn off the heat throw away the water and wash the chicken with cold water

2..in a clean frying fan put 3 tbsp of water and add the chicken..cover and simmer in medium heat until liquid forms to oil..
fry the meat until you get your desired crispiness.but don't fry too much. golden brown color is enough .



3..then add 3 tbsp of sugar into the fried chicken meat..caramelized the sugar by toss and turning the meat..when sugar is melted..




4.lift up your frying pan or turn off the heat..then pour the liquid mixture to the chicken and quickly move your frying pan ..to avoid burning the sauce..
and add 2 tbsp of water ,cover and simmer for 1 minute..
then adding some onion is fine too then cook for 1 minute again ..

if you like a little crispy chicken you can fry the chicken in a frying pan with some amount of sesame oil..fry in a seconds only might get burnt the skin of the chicken../or just skip this method ..

then just slice the chicken into a strips shape ,



5..then scoop some amount of rice to your rice bowl , drizzle with 1 tbsp of teriyaki sauce on top of rice..
and place the sliced chicken to cover the rice and adding any vegetable is fine to to give good combination and yummy presentation too.drizzle with some teriyaki sauce on top of the chicken again and sprinkle with toasted sesame seed and ready to serve...

Chicken Curry Stew

Sweet and spicy creamy chicken curry..want to try..?









Ingredients
5 pieces chicken wings drumstick
1/4 cup curry powder or adjust according to your taste
water for boiling chicken ( 3 cups or more )
20 grams HEAVY CREAM or nestle cream
2 tbsp Butter
1 medium size onion
garlic
Paminta
1 medium size tomato
small cut carrots /or use potato
2 tsp Turmeric Powder
a dash of Paprika Powder
a dash of All Spices Herb /or use Laurel
a small cut Star anise /maaring tanggalin kapag nakapagbigay na ng lasa .
a dash of Cinnamon powder /optional
1 tsp Cayenne Pepper or siling pulbos/or adjust
 some sugar (2 tbsp )
2 tsp Oyster Sauce (this is my style .kahit wala pero i find it more masarap kung meron)
2 tsp VINEGAR ( its also my style ) but can be optional

1 got mixed beans so i added beans in my chicken curry

PAGLULUTO.is BOIL METHOD ,wala n g gisahan

Give a quick hot water blanch or pakuluan ng isang kulo ang chicken meat at banlawan sa malamig na tubig para maalis ang dumi at dugo..( i'm doing this for healthy matter ,no need long explanation)
at saka ilaga ang manok sa 3 cups na tubig ( adjust as it needed)na may timplang laurel,star anise ,paminta ,
Palambutin lang muna ang manok.

 then ihalo ang lahat ng sangkap maliban sa Curry powder at HEAVY CREAM.
lutuin sa mahinang apoy..(slow cooker )
obserbahan lage ,haluin para di manikit..
then adjust the taste and water add as it needed..
kapag malambot na ang carrots.. ihalo ang curry powder at cream ..then haluin para di manikit o masunog at lutuin sa mahinang apoy..


Then ready for hot rice .i made yellow rice made of turmeric powder ( isinaing ko ang bigas na may halong Turmeric Powder and a pinch of himalayan salt..TRY NYO' and enjoy po

lalo na nga at ang sangkap ay hindi kompleto..madaliang luto at tipirang luto..expert na ko diyan
At syempre kung healthy recipes den marami den akong alam...
Imagine naman ,1987 pa ako nasa Kusina..luto ng luto...(don't ask my age hahahh)
Dahil nga ginagawa ko ito malimit ,so tested and proved ko na ang timpla at lasa..

Tokwa't Manok

Kung may Tokwa at baboy ,dapat mayroon deng manok..Para sa hindi palakain ng pork..try nyo ang chicken,at kung di ka kumakain ng chicken.eh di tokwa na lang ..hehehe...
maari naman ang fish na tuna or ibang isda ...like galunggong.bangus at iba pa..

Ang chicken ay niluto ko sa oven toaster ,parang lechon na manok ..







Mga Sangkap

isang piraso ng Chicken thigh yung may balat ( 340 g.)
4 na piraso ng Tokwa kung sa Pilipinas ang Tokwa na gagamitin..
kaunting sibuyas na puti hiniwa hiwa ng malilit
kaunting sibuyas na pula hiniwa hiwa ng manipis
5 busal ng bawang hiniwa ng maliliit
siling labuyo..
1/4 cup na suka
1tbsp na asukal
1/4 cup na tubig
paminta at asin
1 tbsp na patis
3 tbsp na toyo or adjust
kaunting mantika ..i used sesame oil

Maaring gumamit ng iba pang spice or seasoning according na ren sa inyong panlasa ..

Pagluluto...

Bago gumawa ng sauce..
iprito ang tokwa..at itabi muna..
then lutuin sa kawali ang manok,paprito or paihaw ..maaring lutuin ng buo or hiwain ng gustong laki..
niluto ko ito ng mga ten minutes , pasteam sa kawali...takpan para lumabas ang juice at lumabas ang mantika..
at naprito siya sa sariling mantika..at medyo matrabaho nga lang ito
dahil ,niluto ko ulit ito sa oven toaster ng 15 minutes..(so inihaw o paprito is according sa inyong gusto..)


hiwain ang inihaw na manok..



Sa isang mainit na kawali ,maglagay ng mga 2 tbsp na sesame oil..igisa ang bawang ,sili na labuyo at sibuyas na puti,
isunod ang tubig,suka,patis,toyo,paminta asukal at asin...lutuin sa mahinang apoy..
dagdagan ng sili kung gusto ng maanghang na timpla..
    maaring palamigin o iserve na mainit ang ginawang sauce...
then ihalo ang fresh na hiniwang sibuyas na pula...at budburan pa ng ibang green vegetable,like chives ,basil leaf at iba pa..

maaring kainin ng bukod ang tokwa at manok habang bukod ang sauce..
or ihalo ang hiniwang manok at tokwa sa ginawang sauce.....enjoy.
