Chilled Bibingkang Malagkit Recipe

Bibingkang Malagkit is made of Glutinous Rice cooked in Coconut Milk or cream along with Brown sugar or muscovado sugar ..it's a typical Filipino Rice Cake or Filipino delicacy usually cooked in skillet or steaming process..




My bibibngka is ver different from others bibingka you usually known..
continue scrolling to know the ingredients and method of making the recipe..

INGREDIENTS..
servings .. family size.. 3to 5 servings
preparation and cooking ... 4to5 hours to 1 day until you serve it..

3 cups Glutinous Rice
2 cups coconut cream
1 cup coconut milk
1 cup cane sugar or add more
1 tsp vanilla essence or use Pandan
pinch salt

For the Caramel sauce or Coconut Jam..
1  cup coconut cream
1 cup or 1 1/2 cup Muscovado sugar
a drop of vanilla essence

Adding Latik or Coconut Curd is a choice....much better if you add..


Utensils
spatula
wooden spoon
skillet
glass tray or bilao with banana leaf
measurements like cups and spoon..

Procedure..

1,Wash rice properly and soak in water for an hour
then drain when start to use it..

2. In a Skillet , pour 1 cup coconut milk and add cleaned Rice... steam for a few minutes..
stir occasionally ..

When no you notice rice is semi cook add 1 cup coconut cream . keep stirring to avoid burnt..
add coconut milk as it need..

3.. check every rice if its tender enough..then add sugar amount you prepared and add vanilla essence
pinch salt also..

4 .keep stirring until rice cook, and soft and fine texture , no trace of rice if possible..should be fine creamy and chewy ..

5..when you think is the bibingka is almost done..
off the heat and transfer to a tray you prepared..

LETS MAKE SAUCE
in a skillet pour 1 cup muscovado sugar or panutsa together with coconut cream..cook in medium fire , stir until becomes thickens and form a jam... don't over cook

Then Pour the coco jam sauce on top of the Bibingka ..spread it evenly .
and bake in an oven toaster atleast 20 minutes or more minutes.

After you oven baked it..
allow to cool completely or can serve while it's warm

but i suggest the best time to serve this is after you chilled it in the fridge for an hours until the top jam are completely chilled..
then it's ready to slice and enjoy

Puto Cake (Steamed Cake )

Filipino Puto Dish Steamed cake is usually prepared in small size cup cakes .

Dahil ang Filipino ay malikhain at mahilig gumawa ng kakaibang luto marami ang gumagawa ng Cake na puto ang size na parang plato sa lapad at hindi bite sizes kundi hinihiwa ang pag serve..

Let's try..

yellow color because i used muscovado or cane sugar 


INGREDIENTS/MGA SANGKAP 

1..2 cups of Cake Flour

2.. 3 Whole Eggs /Room Temperature

3..2 cups of Fresh Milk or use Evaporated Milk

4..2 tbsp Melted or Soft Butter

5..1 tbsp Granulated Sugar

6..1 cup of Cane Sugar or Muscovado /adjust the sugar or use any sugar you like

7..Add Vanilla essence if desire

8..Cheese for toppings/choose good cheese

9..Salted Eggs / i used ordinary Boiled Salted Egg in Japan ( not shown in my video)


Maghanda ng Pag lulutuan na baking tin or Tray na kasya sa inyong Steamer..
Pahiran ito ng oil or butter , i used 8x8 size round baking tin..


PAGHAHANDA at PAGLULUTO 

Huwag Kalimutang ihanda ang Steamer na paglulutuan( na may tubig ) Pakuluan kapag alam nyong ready na ang cake batter..

1..Let's crack 3 eggs..Paghiwalayin ang yolks at egg whites sa isang lalagyan

2..Batihin muna ang yolks ng bahagya upang madurog ang pula, then add 1 cup sugar ( 3 portion at a time para madali ) Gumamit ng wire whisk or electric mixer ..batihin ang yolks kasama ng sugar hanggang maging smooth..

3..Then ilagay ang 2 tbsp na melted butter, continue mixing with hand mixer until maging parang mayonnaise ..

4..Next is ihalo ang 2 cups na Milk at 2 cups na cake flour ( sifted is fine ) then Continue mixing using hand mixer.. and set aside kapag fine and smooth na ang batter..

5..Ihanda ang egg whites ,1 tbsp na sugar at hand mixer , linisin muna ang hand mixer bago ito gamitin sa batihin ang egg whites ...beat egg whites until foamy ..

6..Then Fold egg whites to cake batter , gently lang ang pag halo hanggang pumantay ang batter ..

7..Siguraduhing Kumukulo ang Steamer..

8..Ibuhos ang Cake Batter sa Hinandang Baking Tray na pinahiran ng butter..

9.. Ilagay sa Steamer at lutuin ng 1 hour mahigit to 2 hours ...ang luto ay depende sa lakas ng apoy o laki at tray na paglulutuan nyo..

10..Maaring takpan ng lid ang baking tin sa loob ng steamer para madaling maluto at di matuluan ng singaw ng tubig na galing sa takip ..( or cover with Cheese Cloth)

11..After 30 or 40 minutes , balikan ang niluluto at lagyan ng hiniwang itlog na maalat at kesa ang ibabaw ng nilulutong cake...takpan ulit at hayaan itong maluto ...

12..About 1 hour and half ,maaring luto na ang puto cake , tusukin kung luto ang loob..

Kapag luto na palamigin muna bago ito alisin sa pinaglutuan..

Chocolate Palitaw Recipe

Palitaw na chocolate ang lasa na may chocolate den sa loob..mukhang masarap di ba?
kase ako personally sarap na sarap dito, many times ko na itong niluluto kase addictive..

Sounds not common ? do you know in Japan it is common usually you can see them in many store
especially in Valentines Day..i love this sweet food but it's not Palitaw . it is MOCHI CHOCO ..
honestly i'm not a Mochi lover or but because of this, i crave a lot on Valentines day only..
and know what, it has chocolate stuffed too ,that's why it's very special and yummy..

I decided to make it in our Filipino Kakanin version ,which is bilo bilo or Palitaw 

Now you can imagine , that it is very easy to cook .right?










INGREDIENTS..




136 grams of GLUTINOUS RICE FLOUR 
6 tbsp coconut Milk
1 tbsp warm water 
4 tbsp COCOA POWDER/ you can use sweetened cocoa
and any Chocolate Candies for stuffing /i used TRUFFLES


Let's Start cooking
The PROCEDURE 

1..First is you need a mixing bowl..Combine glutinous rice flour and Cocoa..stir until well combined..

2..Pour 6 tbsp coconut milk and 1 tbsp warm water..mix until thickens and form like a dough 
adjust liquid if needed..not too sticky but not too dry..then massage it with your clean hands .

3..Get ready for your filling,cut into small size,big filling might run out while we boil the palitaw and of course , get ready your boiling water

4..then we 're going to make a palitaw ball..with a clean hands..grab one tbs scoop of the dough 
make a round shaped using your palm and flattened to fill the chocolate .and seal it to cover the filling and slowly roll it it again in your palm to form a ball ..and continue the method..

And carefully press the palitaw balls a bit , we don't want our palitaw to be like like bilo bilo..

5..Now if boiling water is ready, drop carefully the Palitaw Choco one by one 
once you see them floats ,it's a sign that their are cooked ..
remove it and place in a dish with grated coconut..

6..and now merienda is done, eat warm or cool completely ..
serve with muscovado sugar or anything you like to sprinkle ..
because of the chocolate filling , i think you don't need anything ..just a cup of warm tea is enough..

Maja de Kalabasa



slightly pan fry sweet desiccated coconut on top and latik if you have 




Traditionally,Maja Blanca is made of with sweet corn and topped with latik or toasted desiccated coconut ,others adding shredded cheese ,
when you like something , you tend to create various taste or try another flavor.

Since Squash is healthy , we know some kids don't like vegetables ,just like my daughter, if you don't create something looks yummy ,she won't eat it..or don't serve her a dish with a sliced of squash in her plate..trust me, she'll never touch it..

so to find flavors that suits my daughter's taste..i tried to cheat her just to eat pumpkin..
like mixing it in a cake ,ice cream , muffin or any thing that she thinks it's not taste squash but she knew it is a squash..

anyway, i just feel bored today just because of the weather this week...rain yesterday,rain tomorrow ..and rain the next day..

yeah. i love squash even it's only steamed or boiled, remember it's good for the eyes.

okay.okay,i think i talk too much..

Let me share what i made today, i had a left over Squash ..salad? miso soup? muffin? chiffon? ice cream? but no ingredients available ..
well , i check my ref... coconut milk is there .so i decided to make a kakanin..

i remember the Maja Blanca Kalabasa way back 2013 , when i first tried it ,and it tastes really really good..


INGREDIENTS..




1 cup cooked squash and smashed 
3 cups of coconut milk or more 
or 3 package 120 ml each times 3 equals 360 ml 
1 cup Cornstarch
1 cup Condensed Milk or add more if you like sweeter taste 
 i used COCONUT SUGAR 1 cup ..just to make it healthier

Toppings
grated cheese
latik
or toasted coconut

SIMPLE SUGGESTION .....

If You like Creamy and Soft Maja Kalabasa lessen the Pumpkin like 1/2 cup only 
or lessen the cornstarch like 1/2 cup only 
but me?? , i want a dense but soft and melt in your mouth Maja kalabasa ..not creamy one..
pure coconut milk without water makes melt in your mouth..i assure you..

adding grated cheese into the mixture gives also a better taste..

So water is not needed here or fresh milk... adding this is your decision ..
adjust or add if you like...all recipes are depends on you and preferences ..what you believe and what you traditionally do..do it your way..
and this is my method... i love coconut milk than cows milk..period..

"You can Cook Coconut Milk first if you want ."
before adding the cornstarch..
but in my method what i have learned in my high school days,and from the book i've had read..
they mixed up all ingredients and then begin to cook..
so if you believe yourself , follow your way and i will do my method..okay..

Before you start make sure the Squash are ready. boiled and smashed 




Procedure ...

1..prepare 2 mixing bowl
first bowl ....
combine 1 cup of coconut milk and sugar or condensed milk , mix it well to dissolved sugar ..

now add mashed pumpkin here...mix until smooth and become yellow color...then set aside

2 .second bowl 
put 2 cups of coconut milk , and 1  cornstarch in a bowl
slowly stir with wire whisk to dissolve the cornstarch ..

3. when both bowl are completed , get your skillet or frying pan .




Now Skillet is ready, get a strainer and strain the first bowl of kalabasa ...





4.. now ready to pour the second bowl of dissolved cornstarch..stir for a few seconds..
i mean combine both mixture 1st bowl and 2nd bowl into the skillet ..after you finish strained the squash mixture..

5 .then bring it to heat..turn on medium low fire, and stir the mixture constantly
until thickens, about 7 to 8 minutes..depends on your cooking ware and heat and the amount of your mixture.






6..don't over cook .. try to taste if cornstarch is cooked ..
so when maja kalabasa thickened and cooked , turn off the heat  , pour on your preserve moulder ..
allow to cool down before slicing ..or eat while it's warm.. 



then flip it over ..




Eat with your favorite toppings..


i sprinkle it with sweet dessicated coconut and supposed to be a latik , but no available here..
toast your dried coconut if desired..i want fresh grated coconut here so that's why you see the coconut are not toasted brown color..it's just slightly pan fried..

Ube Cassava Cake Recipe (Steamed)

Steamed Cake , Savory Pinoy Delicacy,perfect combination of
Purple Yam and Cassava , just like eating rice cake ,kalamay or halayang ube 

i wanted to eat Halayang ube and Cassava cake ,so why not cook them together in one recipe..
here is the result ...  in one bite ,two recipes in your mouth ..perfect ..TRY IT NOW!





INGREDIENTS..
servings.. 2 cakes ,round 9x4 inches dip .plus one llanera size
cooking time ..45 minutes
preparing time ..  =.=


1 kilo fresh cassava or yuca root
1 kilo purple yam
3 to 4 cups washed sugar/adjust according to your taste
3 matured coconut ( 5 to 6 cups coconut cream )
2 tbsp melted butter ( 1 tbsp for brushing )
4 cups grated cheese ,add as you like ,choose good cheese
2 cups sweet KAONG(palm Fruit) , or use macapuno
2 whole eggs


Things you need on making the recipe
Banana leaf or alum foil
9x4 baking Tin (round shape) any shape is fine of course
steamer
water for making coconut milk
water for steamer
wooden spoon and huge bowl
knife for slicing
grater ,to grate cassava and ube
cheese cloth for making coconut milk
mashed potato utensil or fork


Preparation and Cooking

1.. peel off the skin of cassava , then use grater for making grated cassava, remove the juices from cassava using cheese cloth ..set aside

2 .wash purple yam , boil until soft , peel off skin and smash the boiled ube ,..until you make a mashed ube..set aside

Get your Steamer and pour half amount of water , let it boil while we prepare the mixture
ready your tray with banana leaves and greased with oil 

3. in a huge mixing bowl, combine grated cassava and purple yam , add 2 cups sugar ,stirring until becomes purple color..adjust sugar while mixing

4. next we can put coconut cream or milk ,continue stirring until completely combined
lack of liquid makes your cake tough , add more liquid if want soft texture and not dense

5. next crack the 2 eggs in a small bowl and put them in to the mixture and mix again

6.meanwhile we can add 2 tbsp butter..continue mixing..

7.once the batter mixture are ready, we can now pour it in our preserve tray and scattered the palm fruit on top,then steam and cook for about 45 minutes or so...cover with banana leaves or cheese cloth if you have..then check it sometimes, while cooking..



8..when you think its almost cooked ,brush some butter on top of the cake ..allow to cool completely then ready to slice..or serve while it's warm..

GINATAANG HALO HALO with STICKY RICE

Pagkaing kinaugaliang lutuin sa araw ng Holy week?
Naniniwala man o hindi ,nakaugalian na itong lutuin tulad ng mga ginataan o kakanin..

Today itinuro ko sa Pamilya ko ang pagluto ng Ginataang Halo Halo na may malagkit na bigas..na kung iisipin mo parang binignit ng Cebu ..na ginagamitan ng Landang na gawa sa Bule .






Mga Sangkap
Pampamilyang Sukat 

1 cup Sticky Rice
3 mature Coconut / for making Coconut Milk and Cream
3 medium Size Ube Kamote
3 medium size Yellow Kamote
3 small size Gabi or Taro root
3 pieces na Saging na Saba
3 cups Luto ng Sago /Tapioca Pearl
1/4 kilo of Fresh Langka
2 cups washed sugar
2 leaf of pandan




Pag-hahanda at Pag-luluto

1.Kung Naasiman sa Saging, Lutuin ito sa Asukal na may Pandan upang gawing minatamis...hiwain ng sa gustong laki at matamisin ang saging..set aside muna

2.Hugasan ang 1 cup sticky rice at lutuin sa tubig or 4 cups na coconut milk , haluin habang niluluto hanggang lumambot ang bigas na parang lugaw...set aside

3..Sa isang malaking lutuan ilagay ang 4 cups na Coconut Milk ,simmer but not boiling haluin ng bahagya at saka ilagay ang kamote at gabi...palambuten ng bahagya

4.Ilagay ang nilutong malagkit na bigas ,haluin at ihulog ang asukal ,sago.langka
haluin para pumantay ang luto at lasa..bahagyang lutuin .

5..Kapag siguradong luto na , ibuhos ang kakang gata para lalong masarap at malinamnam..lutuin ng mga 2 minuto habang hinahalo at ready to serve na...

BIBINGKANG PINIPIG Recipe

Filipino Delicacy (Pinoy Kakanin)
Pinipig ay isang uri ng bigas ,murang bunga ng palay ,pinitpit para maging flakes or flat na butil
Ginagamit ito sa ibat ibang klase ng kakanin,drinks ,desserts at ano pa nga ba? lol



Sabi ng nagtitinda ng bigas,ang kulay berde na pinipig ay food coloring na,"akala ko may totoong berdeng pinipig"..hindi daw lahat ng butil ng pinipig ay magiging berde.
 minsan daw may naliligaw na maberde berde ngunit hindi sobrang berde ,na tulad ng nakikita nyo sa mga pamilihan ..(pekeng kulay pala )

Today nagluto ako ng kakaning pinipig..hinaluan ko sya ng Glutinous rice flour sa dahilang ayaw ko ng purong Pinipig.,parang nagagaspangan ako or sobrang lata ang panlasa ko nito,
So ang pagtitimpla is according na ren sa hilig ng inyong bibig at diskarte ng pagluluto..



Kung tig isang sliced ang kakainin,may 12 pieces ang magagawa..
so..marami na ren ,tikim tikim lang naman ang kain ng di bumigat sa tyan..

INGREDIENTS

2 cups PINIPIG
1 cup Glutinous rice flour
2 can Coconut Milk (4 cups )
2 pinch salt
1 dahon ng Pandan
1 1/2 cup of Muscovado Sugar ( i used 2 cups ,nasobrahan ako ng tamis ) so adjust your sugar
ilang maliit na piraso ng star anise
1/2 cup of Toasted Pinipig for toppings





PAGHAHANDA AT PAGLULUTO..(in my own style)

1..Sa isang bowl na may Pinipig,buhusan ito ng 1 cup na coconut Milk ,haluin at ibabad ng mga 10 to 15 minutes..( di kailangang ang ubod tagal na oras dahil lalata masyado)



2..Sa isang Kawali ,sa mahinang apoy,Ibuhos ang natirang coconut milk sa unang lata muna,
ihalo ang star anise na piraso...( alisin agad kung ayaw ng masyadong malasa ang Anise)
then haluin ng bahagya ,at isunod ang asukal ..haluin at lutuin hanggang maging caramel..




3..Kumuha ng kaunting coco jam syrup para sa toppings ng bibingka,then iset aside muna
ang natirang syrup ay hayaan sa kawali,at dito ihalo ang binabad na PINIPIG
haluing mabuti ,at buhusan ng COCONUT MILK ng ilang batch at di bigla
habang inoobserbahan ang lata o lapot ng pinipig ,ay unti unting ihalo ang GATA ..



ISAMA ANG DAHON NG PANDAN ,bago malimutan..(late ko na itong nailagay)
so ihalo agad ng lumabas agad ang aroma..
(Ang pagbuhos ng Gata ay dahan dahan lang, Kapag binuhos bigla lalapot masyado ang pinipig)
ang diskarte at paraan ay nasa sa inyong kamay,.this is my own techniques.


4..kapag napunang nadudurog na ang pinipig ,ihalo ang GLUTINOUS RICE FLOUR na tinunaw sa kaunting COCONUT MILK..
Haluin hanggang sa mawala ang lagkit at paninikit sa kawali...






5..Kapag nagmukha na syang Kalamay,hanguin at ilatag sa isang paglulutuan na may sapin na dahon ng saging.at ibuhos sa ibabaw ang ginawang jam syrup at ibake sa oven or lutuin sa oven toaster ng mga 15 to 20 minutes,,
or adjust baking time as you observe..
