Chilled Bibingkang Malagkit Recipe

Bibingkang Malagkit is made of Glutinous Rice cooked in Coconut Milk or cream along with Brown sugar or muscovado sugar ..it's a typical Filipino Rice Cake or Filipino delicacy usually cooked in skillet or steaming process..




My bibibngka is ver different from others bibingka you usually known..

INGREDIENTS..
servings .. family size.. 3to 5 servings
preparation and cooking ... 4to5 hours to 1 day until you serve it..

3 cups Glutinous Rice
2 cups coconut cream
1 cup coconut milk
1 cup cane sugar or add more
1 tsp vanilla essence or use Pandan
pinch salt

For the Caramel sauce or Coconut Jam..
1  cup coconut cream
1 cup or 1 1/2 cup Muscovado sugar
a drop of vanilla essence

Adding Latik or Coconut Curd is a choice....much better if you add..


Utensils
spatula
wooden spoon
skillet
glass tray or bilao with banana leaf
measurements like cups and spoon..

Procedure..

1,Wash rice properly and soak in water for an hour
then drain when start to use it..

2. In a Skillet , pour 1 cup coconut milk and add cleaned Rice... steam for a few minutes..
stir occasionally ..

When no you notice rice is semi cook add 1 cup coconut cream . keep stirring to avoid burnt..
add coconut milk as it need..

3.. check every rice if its tender enough..then add sugar amount you prepared and add vanilla essence
pinch salt also..

4 .keep stirring until rice cook, and soft and fine texture , no trace of rice if possible..should be fine creamy and chewy ..

5..when you think is the bibingka is almost done..
off the heat and transfer to a tray you prepared..

LETS MAKE SAUCE
in a skillet pour 1 cup muscovado sugar or panutsa together with coconut cream..cook in medium fire , stir until becomes thickens and form a jam... don't over cook

Then Pour the coco jam sauce on top of the Bibingka ..spread it evenly .
and bake in an oven toaster atleast 20 minutes or more minutes.

After you oven baked it..
allow to cool completely or can serve while it's warm

but i suggest the best time to serve this is after you chilled it in the fridge for an hours until the top jam are completely chilled..
then it's ready to slice and enjoy

Turon Malagkit with Coconut Mango Glaze

What to do with the Left over Sumang Malagkit or Suman sa Ibos..? i made a TURON with it..


Sweet Egg Roll Recipe with sticky rice inside ..coated with Cane Sugar Caramel with coconut milk and mango puree flavor , and sprinkled with toasted Sesame seed..



INGREDIENTS..

FOR LUMPIA 
Lumpia Wrapper 12 pieces
Sinaing na Malagkit sa Gata na may asin/or Left over Sumang Malagkit or Suman IBOS
Minatamis na mangga for filling
Sugar /to coat malagkit if desire


Caramel Sauce 

1/4 cup mango puree /or mango jam
1 to 2 Cups Panutsa or Brown Sugar
1 cup Coconut Milk/ kakang Gata
pinch salt/optional
vanilla essence
1 stick cinnamon
pandan leaf/optional



PAG LULUTO
1. Gumawa muna ng Caramel Sauce...
sa isang kawali ibuhos ang Coconut milk at Asukal , manggang minatamis , vanilla essence, cinnamon stick at pandan leaf..lutuin hanggang maging thick sauce ...then set aside.

2 Ihanda ang Malagkit at Lumpia wrapper ...at ibalot ang malagkit , maglagay ng sapat na dami ng malagkit at matamis na mangga then balutin ng lumpia wrapper


3. Kapag nabalot na ang mga lumpia, Mag painit ng mantika.. Lubog ang pag piprito nito..
lutuin hanggang maging crispy ang Turon...
then saka hanguin...

4..Next ihalo ang lumpia sa Caramel sauce na ginawa..hanggang mabalutan ng caramel ang turon..
at maaring bubudbudan ng sesame seeds or nuts ..
ENJOY..

SUMAN sa Ibos Wrapped in Banana Leaves

Homemade Suman sa Ibos or Ibus...

When Palm Leaves is not available..Paano kung gusto mong magluto o kumain ng Ibos suman?





Here is my recipe to share ..easy and simple



INGREDIENTS


11 to 12 pieces ,size around 6 inches long ..

For making MALAGKIT 
Banana Leaves
3 cups Glutinous RICE/Malagkit na Bigas
Coconut mIlk /i used 1 pack 250 ml
1 tsp SALT /i used Pink salt

For Boiling Suman 
Water for boiling Suman
250 ml Coconut Milk /or 2 cups gata ikalawang piga
1 tsp TURMERIC POWDER/luyang dilaw po ito
Ritaso ng Dahon ng Saging if mayroon..

GLAZE syrup
1 cup kakang gata
2 tbsp to 1/4 cup mashed mango puree/use jam or fresh
2 cups Panutsa or Cane Sugar/or Brown Sugar..
1 stick cinnamon
drops of vanilla essence or mango esssence
pandan leaf if you have / optional

PAGLULUTO..

1.Hugasan ang Bigas ng 2 to 3 times...at salain

2. Ilagay ang hinugasang bigas sa isang bowl , ibuhos ang 250 ml na Coconut milk at 1 tsp na asin..
Hayaan itong mababad hanggang masipsip ng bigas ang gata..

3. After a few minutes , maoobserbahan nyong mawawala ang liquid at aalsa ang bigas..that's what we want..

4..Ihanda ang Dahon ng saging..paiinitan sa apoy ng bahagya para lumambot at putulin ang dahon ayon sa sukat para makagawa ng tamang laki ng suman..

5..kumuha ng sapat na dami ng binabad na bigas at ilagay sa gitna ng dahon . ibalot ito ng pasuman ayon sa gustong paraan ng ng pag babalot...tinalian ko ang suman upang di lumigwak ang sinaing na malagkit..gamit ang tali ng hamon..string ham /sorry i wrote it ham thread on my vlog..




6..Kapag nabalot ng lahat ang bigas..ihanda ang lulutuan ..mas malalim mas maganda..i mean magandang isaing ang suman ng NAKATAYO..dahil kawali ang ginamit ko..Nakahiga ko syang Nilaga...

7..Sapinan ng dahon ang luluuan at isalansan ang Suman..buhusan ng 2 cups ng gata at punuin ng tubig to cover the suman , then add 1 tsp of Turmeric Powder..cover with dahon ng saging kung mayroon pang dahon..Takpan ng Lid.

8..Cook this slowly about 2 hours..
check it sometimes...kung luto na or kulang sa tubig..at maiwasan kung sumusubo ,kailangan itong makahinga at bigyan ng awang ang takip habang ito ay niluluto..(same as your cooking sinaing na kanin )..

Kapag Luto na...Ready na ang inyong SUMAN

Eat while its warm or cool ..2 to 3 days ang itatagal ..but the best day to eat, is when the day you cooked it..
But you can fry it the next day, or steam, or make a turon with the left over suman...enjoy po
