INGREDIENTS..
2 cups heavy Cream or use All Purpose Cream
1/2 Cup Sugar of your Choice
1/2 Cup Unsweetened COCOA POWDER
2 tsp Espresso powder or instant Coffee
2 1/2 tbsp Cassava Starch or 3 tbsp Cornstarch
1 cu semi sweet dark Chocolate Chips
drops of Vanilla
Some pistachio or nuts you like
1 dark chocolate bar .. Shaved or grated
PREPARATION
1.in a medium sauce pan, heat the milk for medium for 2 to 3 minutes ..
2. Whisk in the Sugar , Cocoa , Espresso , diluted Cornstarch , add chocolate chips..
Stir in medium heat until mixture thickens..about 5 to 7 minutes or so..
3, Then remove from the heat.. and stir in vanilla ..
4, Pour mixture in a glass or cups you prepared .. or small coffee cup then let it cool uncovered..
for 30 minutes or so..
5, Refrigerate before servings.. so you can enjoy the yumminess of the cream ...
And if desired garnish with nuts you like and shaved curl chocolate ..

INGREDIENTS
Use Fresh Young Coconut if available
1 used 1 can of Young Shredded Coconut
1 can of condensed Milk/ Di ko sya nilagay lahat /i don't have sweet tooth kase
1 bar of Agar Gulaman or use Powdered Gulaman use according to instruction
5 stalk of Pandan/limang Tangkay ng dahon ng pandan
500 ml Water
50 ml water again for making pandan extract
Cheddar Cheese / choose your fave cheese
200 ml Heavy Cream or Nestle Cream
PAGHANHANDA at PAGLULUTO
1.Hugasan ang Pandan Leaves at gupitin ng medyo malilit ...ilagay sa blender at lagyan ng 50 ml na tubig...iblend ng dahan dahan hanggang madurog at lumabas ang katas at kulay ng pandan..
Then isalin sa isang lalagyan .Salain ito para alisin ang Sapal..set aside muna
2..Mag painit ng 500 ml tubig ,
Habang nag papainit ng tubig ,putol putulin ang gulaman bar at ibabad lang ng ilang segundo sa malamig na tubig at saka pigain ang gulaman...ilipat sa isang lalagyan muna ang hilaw na gulaman
3.Kapag kumukulo ng bahagya ang tubig , ihulog ang Hilaw na Gulaman , lutuin hanggang matunaw ang gulaman, kapag wala ng gulamang namumuo..
Ihulog ang PANDAN EXTRACT ..haluin itong mabuti para pumantay ang kulay green..haluin lang ito ng 20 segundo ..then hanguin na ..
SALAIN ang nilutong gulaman hanggat mainit kung gusto ng pino na jelly ..ilagay sa isang tray na paglalgyan
4..Hayaang lumamig ang Pandan Gulaman bago ito hiwain..
5.After an hour at matigas na ang gulaman , maari na itong hiwain o i cut ng may shape using any cutter like star , heart or else..or hiwain na lang ng pa kudrado na maliliit.
6..hiwain den ang Cheese or lagyan ng design para matuwa ang kakain lalo na ang mga bata..
7.Now , in a huge Mixing Bowl ,Ihulog ang Sheredded na buko without the liquid ,ihalo ang hiniwang Pandan Gulaman at ibuhos ang Condensed Milk according to your taste ang tamis at timpla..
8.then ilagay ang keso ,mas marami mas malinamnam..
Adding Tapioca pearl, Nata de coco, corn ..or anything you like na bagay sa Buko Pandan is Fine ..
Chill in the Fridge until Ready to Serve..

Ingredients
15 to 16 pieces servings/ and depends on size
2 cups Dessicated Dried Unsweetened Coconut
1 can Condensed milk/adjust the amount for sugar conscious person
drops of vanilla essence
pinch of salt
2 egg yolks
PAGLULUTO...
1. In a Skillet kung saan nyo lulutuin , ibuhos ang isang can ng condensed milk at 2 egg yolks, Paghaluin itong mabuti...at saka buksan ang apoy sa mahinang init..haluin ito ng ilang segundo ..
2..Habang hinahalo ihulog na ren ang Dessicated Coconut haluin lang ng haluin na parang gumagawa ng yema candy...
3. Adding a pinch of salt and vanilla is ok if desire
4.When you notice na kumukunat o namumuo na ang yema ,sign na ito na malapit ng maluto..tikman kung satisfied sa kunat.
5..At kung luto na , magsimula ng gumawa ng shape na gustong laki , shape size according you like or use any shape moulder.
6..Allow to cool completely before serving ..or eat while its warm...

Traditionally,Maja Blanca is made of with sweet corn and topped with latik or toasted desiccated coconut ,others adding shredded cheese ,
when you like something , you tend to create various taste or try another flavor.
Since Squash is healthy , we know some kids don't like vegetables ,just like my daughter, if you don't create something looks yummy ,she won't eat it..or don't serve her a dish with a sliced of squash in her plate..trust me, she'll never touch it..
so to find flavors that suits my daughter's taste..i tried to cheat her just to eat pumpkin..
like mixing it in a cake ,ice cream , muffin or any thing that she thinks it's not taste squash but she knew it is a squash..
anyway, i just feel bored today just because of the weather this week...rain yesterday,rain tomorrow ..and rain the next day..
yeah. i love squash even it's only steamed or boiled, remember it's good for the eyes.
okay.okay,i think i talk too much..
Let me share what i made today, i had a left over Squash ..salad? miso soup? muffin? chiffon? ice cream? but no ingredients available ..
well , i check my ref... coconut milk is there .so i decided to make a kakanin..
i remember the Maja Blanca Kalabasa way back 2013 , when i first tried it ,and it tastes really really good.. INGREDIENTS..
1 cup cooked squash and smashed 3 cups of coconut milk or more or 3 package 120 ml each times 3 equals 360 ml 1 cup Cornstarch 1 cup Condensed Milk or add more if you like sweeter taste i used COCONUT SUGAR 1 cup ..just to make it healthier Toppings
grated cheese
latik
or toasted coconut
SIMPLE SUGGESTION ..... If You like Creamy and Soft Maja Kalabasa lessen the Pumpkin like 1/2 cup only or lessen the cornstarch like 1/2 cup only but me?? , i want a dense but soft and melt in your mouth Maja kalabasa ..not creamy one.. pure coconut milk without water makes melt in your mouth..i assure you.. adding grated cheese into the mixture gives also a better taste..
So water is not needed here or fresh milk... adding this is your decision ..
adjust or add if you like...all recipes are depends on you and preferences ..what you believe and what you traditionally do..do it your way..
and this is my method... i love coconut milk than cows milk..period.. "You can Cook Coconut Milk first if you want ." before adding the cornstarch..
but in my method what i have learned in my high school days,and from the book i've had read..
they mixed up all ingredients and then begin to cook..
so if you believe yourself , follow your way and i will do my method..okay.. Before you start make sure the Squash are ready. boiled and smashed
Procedure ... 1..prepare 2 mixing bowl first bowl .... combine 1 cup of coconut milk and sugar or condensed milk , mix it well to dissolved sugar .. now add mashed pumpkin here...mix until smooth and become yellow color...then set aside 2 .second bowl put 2 cups of coconut milk , and 1 cornstarch in a bowl slowly stir with wire whisk to dissolve the cornstarch .. 3. when both bowl are completed , get your skillet or frying pan .
Now Skillet is ready, get a strainer and strain the first bowl of kalabasa ...
4.. now ready to pour the second bowl of dissolved cornstarch..stir for a few seconds.. i mean combine both mixture 1st bowl and 2nd bowl into the skillet ..after you finish strained the squash mixture.. 5 .then bring it to heat..turn on medium low fire, and stir the mixture constantly until thickens, about 7 to 8 minutes..depends on your cooking ware and heat and the amount of your mixture.
6..don't over cook .. try to taste if cornstarch is cooked .. so when maja kalabasa thickened and cooked , turn off the heat , pour on your preserve moulder .. allow to cool down before slicing ..or eat while it's warm..
then flip it over ..
Eat with your favorite toppings.. i sprinkle it with sweet dessicated coconut and supposed to be a latik , but no available here.. toast your dried coconut if desired..i want fresh grated coconut here so that's why you see the coconut are not toasted brown color..it's just slightly pan fried..

Halayang Ube ay masarap lalo na sa halo-halo,kahit sa puto,kakanin at mga baked foods.
Today nag imbento ako ng lutong ube ,very simple and easy.
Cake siya pero no baking ,pero dahil ang sangkap ay butter at cream cheese, alalay lang sa pagkain.
pero sobrang sarap ,isang slice lang solve ka na..at maari itong tumagal sa freezer ng isang linggo..
INGREDIENTS...
200 grams..Cream Cheese
2 cups Halayang Ube
100 grams Butter or add more
Marie Biscuits..1 box (Ordinary pack size)
I made Halayang Ube out of sweet purple kamote ...with honey and coconut milk..

Preparation here..
Paghaluin ang 1 cup Halayang Ube at 200 g. Cream Cheese together
Then here is the ube and cheese mixed ..set aside
In a separate bowl,combine 100 g.butter and 1 cup Marie Biscuits crumbs.
At gumawa ng crust sa isang tray na pag lalagyan ng cake..then patigasin ito ng 1 hour sa freezer..at saka balikan..
After 1 hour ..kung matigas na ang cheese, ang 1 cup na ube halaya ay ipahid sa ibabaw.at ibalik ng 2 to 3 hours sa freezer para tumigas ng kaunti .at ready to serve na..
